Breakfast Potatoes

These breakfast potatoes are a staple weekend meal. Notice how I didn't specify breakfast? That's because I purposely make extra so I can eat it throughout the day and rest of the week. This is an easy meal where you throw the ingredients all together in a bowl and bake!

Poached egg is optional, but can you really eat breakfast potatoes without a runny egg? You can also add a fried egg if you aren't a fan of poached, or omit the egg all together.

You can really take a look at what veggies you have in your fridge that you would like to incorporate. My favorite combo is pictured above: green, red, orange and yellow peppers, purple onion, and hot Italian sausage. I also like to add mushrooms and if I have it, chorizo, although any type of sausage will do! Feel free to add your favorites!

Combine all your ingredients in a large bowl, olive oil and seasonings until well combined. I love heavy seasoning, so feel free to adjust to your taste. I also like a hint of heat, but that's the great thing about this recipe, it's totally customize-able to what you enjoy! Sometimes I will add green onions or parsley to finish, so feel free to get creative with it!

I mean, look at all those colors! Evenly spread the mixture out on a jelly roll pan that's been sprayed with nonstick. Bake at 450 degrees for 20 minutes, or until the potatoes are cooked through.
Ingredients:
3 lbs. red potatoes
half of an onion (I prefer red, but you can use a white or yellow onion if you'd prefer!)
half of a green, yellow, red and orange pepper
1/2 lb. of hot Italian sausage
3 Tablespoons olive oil
3 Tablespoons Old Bay seasoning
2 teaspoons garlic powder
2 teaspoons black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
Directions:
Preheat the oven to 450 degrees. Spray nonstick on a jelly roll pan and set aside.
Wash and dice potatoes into half inch cubes. Add to a large sized bowl.
Wash and dice all produce you are adding to your dish. Add the veggies and sausage to the bowl with potatoes.
Add the olive oil to the bowl and stir to combines. You want to make sure the olive oil is coating everything to the seasoning will stick! Feel free to add 1-2 Tablespoons if needed.
Once everything is evenly combined, add in all of your seasonings. As I mentioned above, feel free to add different spices! Sometimes I will use Cajun seasoning, or switch in fresh minced garlic for garlic powder. Again, this dish is a blank canvas so make it what you'd like!
Once the dish is all combined, add to the jelly roll pan. You want to make sure the potatoes are an even single layer. If you need to make more, use two separate pans
Half way through cooking, stir potatoes. This will allow the potatoes to have the chance to get crispy!
While they're baking, cook eggs the way of your choice. I liked to poach my eggs in salted water with a teaspoon of white vinegar. Bring to a simmer, crack an egg into a bow and lower into the simmering water. Cook approximately 2 minutes or until the white part is cooked, but the yolk is still runny.
Remove the potatoes from the over when runny and plate up with your toppings (eggs, parsley, etc.) Enjoy!
