Not Your Mama's Meatballs

I always thought my mama's meatballs were the best meatballs I have ever had! I remember watching her as a kid start the process the day before by laying out her bread to dry, mixing everything in a huge bowl with her bare hands and how much love went into the process.

Ingredients:

For the meatballs:

  • 3/4 lb. ground beef

  • 3 hot Italian sausage links

  • 2 garlic cloves, minced

  • 1 small onion, chopped small (about 1 cup)

  • 1 egg

  • 1 teaspoon kosher salt

  • 1 teaspoon freshly cracked black pepper

  • 2 tablespoons freshly chopped basil

  • 2 tablespoons freshly chopped parsley

  • 1 teaspoon Italian seasoning

  • 1 cup smashed Saltine crackers

For the sauce:

  • 1/2 cup red wine

  • 2 garlic cloves, minced

  • 2 28 ounce cans crushed tomatoes

  • 1 small onion, chopped (about 1 cup)

  • 1 green pepper, chopped

Directions:

  1. Remove Italian sausages from casing by cutting the film and squeezing the meat out into a large bowl. Add ground beef, garlic, onions, egg, Italian seasoning, salt and pepper. Also add 2 tablespoon of chopped basil and parsley along with the cup of Saltines.

  2. Using your hands, mix ingredients until everything is evenly distributed throughout.
