Shrimp, Mushroom and Basil Fettuccine Alfredo

Homemade Fettuccine Alfredo seems like such a daunting recipe to attempt. This dish is so easy and so delicious. It's creamy, cheesy and the basil adds an unexpected freshness that works to make this classic pasta dish modern.

I recently recieced a gift card from a few coworkers to Williams-Sonoma and immediately took to the internet to see what goodies I could find.

Ingredients:

  • 1 lb. Fettuccine noodles

  • 1 1/2 lbs. peeled shrimp

  • 2 tablespoons olive oil

  • 1 tablespoon red paper flakes

  • 2 tablespoons minced garlic cloves

  • 3 tablespoons chopped fresh basil

  • 1 cup sliced mushrooms

  • 1/2 cup butter

  • 1/3 cup flour

  • 3/4 cup heavy cream

  • 1 1/2 cups skim milk

  • 1 cup grated Parmesan cheese

  • 1/2 cup Romano cheese

  • 1 teaspoon kosher salt

  • 1 teaspoon cracked fresh pepper

Directions:

  1. Bring a medium sized pot of water to a boil. Add olive oil to a large saucepan and bring to medium heat. Once hot, add shrimp, basil, red pepper flakes, garlic, salt and pepper and saute until cooked through, approximately 4 minutes.
