Fresh Salmon Burgers

These Salmon Burgers are an awesome alternative to the traditional heavy beef burger. They're super fresh and packed with veggies, so even though it's smothered in aioli, I will still tell myself they are healthy.

Pair this with a toasted brioche and my Lemon-Garlic Aioli! Enjoy :)

Ingredients:

  • 1 lb. skinless, boneless salmon

  • 1/4 cup bread crumbs

  • 2 tablespoons minced red onion

  • 2 tablespoons minced green peppers

  • 2 tablespoons minced green peppers

  • 2 tablespoons Dijon mustard

  • 2 tablespoons mayo

  • 1 teaspoon minced garlic

  • 1 half of a lemon, juiced

Lemon Garlic Aioli:

  • 1/2 cup mayonnaise

  • 3 garlic cloves, minced

  • 1 half lemon, squeezed

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon black pepper

Directions:

  1. Cut the salmon into chunks. Place half of the salmon in the food processor with the mayo and Dijon and blend until it becomes a paste.

  2. Add the minced onions, peppers and lemon juice with the rest of the salmon. Pulse until combined, but not a paste like the step before.

  3. Scrape the contents of the food processor out into a medium sized bowl. Stir in bread crumbs until combined.

  4. Form 4 patties. Heat a medium sized skillet to medium/high heat. When hot, place patties in the pan and cook for 3 minutes a side. You can also grill these patties for 4 minutes a side.
